Canned cherries freeze well. Simply drain, pat dry and pack in a freezer bag or container. Seal well. If you pack them loose, you will then be able to take out individual cherries as and when you need them - they make great fruity ice cubes for cocktails and punches! The cherries will keep in the freezer for about 6 months.
Tips
You can eat the muffin straight from the mug or turn it out onto a plate by simply running a knife round the edge and tip upside down on to a plate to remove.
Tips
Check the capacity of your mugs by filling them with water and then measuring the water quantity in a jug. If you use a mug smaller in the size, the mixture will bubble out into the microwave and won't cook properly. You can use a mug that is larger in capacity but the mixture will cook lower down in the mug.

25 gLightly Salted Butter (1 oz) or margarine
15 mlMilk (1 tbsp) Semi Skimmed
25 gCaster Sugar (5 tsp)
40 gSelf-Raising Flour (4 tbsp)
1Dr. Oetker Fine Dark Cocoa Powder (2 tsp)
80 gTinned Black Cherries (Approx 6 cherries, drained, pitted and chopped)
10 gDr. Oetker Extra Dark 70% Chocolate Chunks (1 tbsp)
1Medium Egg
2Large Eggs
To decorate
10 mlWhipping Cream (1 tbsp) Whipped
10 gCherry Jam or Cherry Sauce (See Tip)

Put the butter or margarine in a 300ml (1/2pt) microwave-proof mug – see tip. Put in the microwave to melt on High power for about 50 seconds.

Add the egg and milk to the mug and beat with a fork until thoroughly combined.

Add the sugar, flour and Cocoa Powder and beat again until smooth. Gently mix in the cherries, and sprinkle the Chocolate Chunks on top.

Cook in the microwave on High power (850 watt) for about 2 minutes until well risen and springy to the touch. Or 750w for about 2 minutes 15 seconds. (Caution, mug will be hot!) Leave to stand for 1 minute; then remove the mug from the microwave and leave to cool for about 5 minutes.

To decorate, top with whipped cream and drizzle with cherry sauce or jam before enjoying warm, straight from the mug.
