First, preheat your oven to 180°C/160°C/Gas Mark 4. Line your muffin tin with Dr. Oetker spooky cupcake cases.
In a big mixing bowl, add the margarine and sugar, then cream them together until they’re light and fluffy.
Crack in the eggs, add a splash of vanilla and beat until smooth. If the mixture looks a little curdled, sprinkle in a spoonful of flour. Then gently fold in the rest of the flour.
Divide your mixture between the cases and bake for 15–20 minutes, until your cakes have risen and turned golden brown. Let them cool in the tin for 10 minutes before moving them onto a wire rack to cool completely.
Pop the butter in a bowl and whisk until pale and fluffy. Add the icing sugar, a drop of green food colour gel, and vanilla potion, then beat until smooth. Scoop into a piping bag fitted with a star nozzle.
In another bowl, mix custard, caramel flavouring, and more green food colour gel.
Once your cupcakes are cooled, use a sharp knife to carve a circle out of the top of each cake (about 2cm from the edge—like cutting a pumpkin lid). Lift it out, spoon in a little green custard, then replace the sponge lid. Repeat for all cupcakes.
Top with a swirl of green frosting, then let your creepy creativity run wild! Decorate with icing pens and sprinkles, until your Slimy Surprise Cupcakes look monstrously magnificent.
Now they’re ready to give your little ghouls a frightful (and tasty) Halloween bite!
