
First things first, in a small bowl mix the ground flaxseed with 3 tbsps of warm water and leave to one side to form a gel.
Pop the flour, Baking Powder, oat milk, cider vinegar, Orange Extract and flaxseed mixture to a blender and blend into a perfectly smooth batter. Pour the batter into a jug or bowl and stir through half the chopped Dark Chocolate.
Brush a non-stick frying pan with sunflower oil and pour in a spoonful of mixture. Cook the pancake for 1-2 minutes on each side or until puffed and golden brown on each side, repeat until all the mixture is used. You should make about 12 pancakes; keep the pancakes warm in the oven on a low heat.
Melt the remaining Chocolate in the microwave in 20 second bursts stirring between each burst until. Once melted whisk in 1 tsp of sunflower oil and ¼ tsp of the Orange Extract.
Serve the pancakes in a stack, drizzle over the chocolate sauce and sprinkle the orange zest over the top to garnish.
