First up, break the Chocolate into pieces and put in a bowl with the butter. Melt together in the microwave in 20 second bursts until melted, stirring between each burst.
Put the egg, sugar and Peppermint Extract in a bowl and whisk until pale and creamy in texture. Beat in the melted chocolate mixture. Sieve the flour and Baking Powder on top, add the Chocolate Chips and mix together thoroughly. Cover and chill for about 1 hour until firm.
When ready to bake, preheat the oven to 180°C/160°C Fan/Gas Mark 4. Line 2 large baking trays with parchment paper. Sift the icing sugar into a small bowl and pour a mix of sprinkles into another bowl.
Using a small ice cream scoop or a rounded dessert spoon, take a scoop of the chocolate mixture and roll into a ball. Round some of your cookie dough ball in the icing sugar and some in the bowl of sprinkles and arrange on the baking trays placed slightly apart.
Bake for about 15 minutes until your cookies have risen and crackled in appearance, the cenre of your cookie should still be soft.
