
Preheat the oven to 150°C or 300°F.
Pop the American pancake mix in a bowl with the milk and give this a mix until combined.
Make the cinnamon swirl- In a separate bowl add the butter, sugar, cinnamon, and vanilla and mix until combined. Pop in a piping bag and save for later.
Heat a medium frying pan on a medium heat and brush with oil. Once hot pour in the pancake batter. Pipe in the cinnamon mixture to create the swirl on top. Cover the pan with a lid or tin foil and allow to cook for around 3-5 minutes. Pop in the oven to carry on cooking until you have made all 6 pancakes.
Add the icing sugar and cinnamon to a bowl and stir though the cream until a thin water icing consistency.
Stack the pancakes, drizzling the icing on each layer as you go.
