For the Biscuit Dough
200 gHoney
100 gCaster Sugar
15 mlWater (1tbsp)
250 gPlain Flour
250 gRye Flour
5 gDr. Oetker Baking Powder (1tsp)
2.5 gDr. Oetker Bicarbonate of Soda (1/2tsp)
1 gGround Cinnamon (1/2tsp)
5 gGround Ginger (2tsp)
1Medium Egg (beaten)
70 mlWhole Milk
50 gUnsalted butter (softened)

Pop the honey, sugar and water into a saucepan over a low heat and stir until all the sugar has dissolved, leave to cool for 5-10 minutes.

In a large bowl, mix the flours, Baking Powder, Bicarbonate of Soda, cinnamon and ginger. Pour in the egg, milk, butter and honey mixture and mix together to form a dough – you can do this by hand but it is easier with a freestanding mixer with the dough hook attachment. Wrap the dough in clingfilm and chill for approx. 2 hours.

Pre-heat your oven to 180°C/160°C/Gas Mark 4 and line 2-3 baking trays with greaseproof paper. Roll out your dough on a floured surface to approx. ½cm thickness and cut out using different festive cutters. Brush your biscuits with milk and bake for about 10 minutes.

Leave to cool on the trays for about 15 minutes and then transfer to a wire rack to cool completely.

Once your biscuits are cooled use the White and Gold Decorating Icings to decorate your biscuits!
