First up mash your bananas in a large bowl until smooth. Sieve in the flour and Baking Powder and pour in the Vanilla Extract. Mix together to combine.
Heat a large pan of oil over a medium heat until it reaches 160°C. Using an ice-cream scoop, scoop a spoonful of mixture and gently release it into the oil and allow to bubble away for about 2 minutes and then flip over with a slotted spoon to cook the other side for another few minutes until golden brown. Once cooked pop onto a cooling rack with kitchen roll under to catch any excess oil.
In a large bowl mix together the sugar and cinnamon and toss the warm doughnuts in the sugar to coat.
