
Make the mascarpone- mix the cream cheese, icing sugar, and vanilla extract until smooth. Pop in the fridge for later
In a bowl, in the pancake mix, milk and pink food colouring. Give it a good mix until bright pink.
Heat a medium frying pan on a medium heat, drizzle with oil. Once hot. Using a homemade tinfoil cutter or heart shaped cutter, pour over the pancake mix. Once bubbles start to appear take off the heart cutter and flip. Cook on the other side for a further 2 minutes. While you make the other pancakes keep warm in a low temperature oven.
(you can also make circle pancakes and cut out a heart shape after)
Layer the pancakes with the mascarpone, raspberry coulis, and fresh raspberries. Top with the Pink Party Sprinkles.
