Line two baking trays with parchment paper and set aside.
Pop the butter and sugar in the bowl of a standing mixer and beat until light and fluffy. Add vanilla paste and the egg and beat until combined. Add flour, cinnamon, mixed spice and salt and beat until it forms a dough.
Place the cookie dough on a floured surface and roll to ½ – 1 cm.
Using a large plate cut around it to make a large circle, then using a small plate place on top of the large circle and cut round it to make a halo shape.
Using the rest of the dough, cut out the dough with star-shaped cookie cutters and place them 2 cm apart on the prepared baking trays. Repeat until all the dough is used.
Chill in the fridge for at least 2 hours, or overnight. (If possible)
Preheat oven to 180 °C /160 °C/ fan/ gas mark 4. Bake the stars for 8-10 minutes or until cookies are golden brown around the edges. Bake the halo for 15-20 minutes or until cookies are golden brown around the edges.
Once cookies are completely cooled, decorate cookies with icing and sprinkles to decorate your delicious vanilla cookies. Pop the white chocolate into a microwave safe bowl and place in the microwave on 30 second bursts until melted. Using your white chocolate place blobs on the back of your cookies and stick them to the halo cookie to create a beautiful star cookie wreath!
