First up, pop both pancake mixes, in a bowl and add in the milk, (as per pack instructions 460ml) and then add in the green food colour gel. Give this a good mix with a hand whisk until smooth.
Heat a large frying pan until hot and brush lightly with a little oil. Pour the mixture into a measuring jug. (You need to make 14 pancakes all together). Start off with making the two largest pancakes for the bottom and making them smaller every time. (2 of each size) Cook the pancakes over a medium heat for about 2 minutes until bubbles begin to appear on the surface of the pancakes. Flip the pancakes and cook for a further minute until both sides are golden brown in colour. For the 14th pancake make a small pancake. (this is to cut a star out of it for the top) Remove the cooked pancakes from the pan.
Place on a tray lined with grease proof paper and place in the oven on a very low heat to keep warm. Prepare the rest of the pancake batter as above.
Once cooked cut a star out of the smallest pancake for the top.
Stack the pancakes from biggest at the bottom to the smallest on top.
Use the decorating icing decorate the star. Then finally pip on small dots to glue on the rainbow sprinkles to look like Christmas lights.
Dust with a little icing sugar for a snowy effect.
Serve with your choice of syrup.
