First, divide the icing sugar into three bowls and then stir in 1½ tablespoons of icy-cold water to each (add a few more drops if your potion feels too thick).
In the first bowl, swirl in some green food gel. In the second, stir in a splash of orange food colour gel.
And the last bowl must remain bone-white… as pale as a ghost!
Now it’s time to dip, drizzle, or dunk your madeleines into the icing. Sprinkle on creepy eyes and spooky sprinkles, then leave them to set.
