
In a bowl add the crushed digestives and melted butter and give this a mix. Then put 30g of the biscuits into the 6 jars.
Using a handheld whisk, whip the double cream until it forms soft peaks.
In a separate bowl pop in the cream cheese, icing sugar, and vanilla extract and whisk until smooth.
Fold the double cream, though the cream cheese mixture.
Separate the cheesecake mixture into 3 bowls. Pop the pink food colour in one the yellow in the another and the green in the final one and fold though.
Pop one colour on top of the biscuit base and spread lightly. Then the next colour and spread lightly, and then the final colour. Save some cheesecake mixture the pipe on the top. Alternately you can pipe the mixture into the jars, which will give you a neater finish.
Pipe a swirl of the cheesecake filling on top and finish with the Unicorn confetti sprinkles and wafer flowers.
