
Preheat the oven to 180°C/ 160°C Fan/Gas Mark 4. Grease and line a 7”x7” square baking tin. Break the chocolate into pieces and place in a microwavable bowl, add the butter. Melt the chocolate and butter in the microwave in 30 second bursts, stirring between each burst until the mixture is melted.
In a bowl of a stand mixer, or using an electric whisk, pop the sugar and the eggs in a bowl and whisk until pale and thick. Add Vanilla Extract, and on a slow speed slowly add in the melted chocolate and butter mix.
Sieve the flour and cocoa powder onto the top of the mixture and fold in until just combined. If using, fold in the chocolate chunks. Pour the mixture into the prepared tin and smooth the top. Place in the oven and bake for 30 minutes, until the edges of the brownie are firm and the middle has a very slight wobble. Turn off the oven and leave the brownie in for 15 minutes. Take out the oven and leave the brownie to cool in the tin.
Once cooled the brownie can be decorated.
In a microwave safe bowl, pop in the white chocolate, and melt in the microwave in short bursts, mixing in between until fully melted. On a piece of parchment, pipe your personalised message on, and allow to fully set.
Once the chocolate message has set, in a microwave safe bowl, pop in the milk chocolate, and melt in the microwave in short bursts, mixing in between until fully melted.
Pipe the chocolate on the top of the brownies. Then decorate with your personal message, the chocolate hearts and the party sprinkles.
