Preheat the oven to 180˚C (160˚C fan assisted oven, 350˚F, gas mark 4). Grease and line 1x 6inch circle cake tin and 1x8inch circle cake tin.
In a bowl, pop the eggs, oil, peanut butter, water , vanilla and apple sauce and whisk together until combined. Allow to stand for 5 minutes.
While the mixture is resting, in a bowl combine the plain flour, baking powder and baking soda and whisk until combined.
Once the mixture has rested, add in the grated carrot and the dry ingredients and whisk together until combined.
Divide the mixture between the tins, and bake for 30-40 minutes.
In a bowl, combine the cream cheese and the peanut butter.
