How to bake a perfect, light sponge.

Don't bang the spoon! When mixing or creaming your sponge mix, be careful not to bang your spoon on the side of the mixing bowl to get rid of any excess mixture on the spoon. Banging against the bowl will reduce the number of air bubbles which are essential to creating a light textured sponge.
